Yes you can. Its lentils and vegetables, good protein and fibre. Only thing, if it causes you acidity then go light on the spice and oil. I had no issue with it.
Sambar is fine, its actually a good wholesome dish. I just watched how much rice I had with it because of my sugar. The sambar itself with lots of veggies is great. Adjust spice to your comfort.
Sambar rice was literally my comfort food all 9 months, never gave it up. So tasty and filling. Just dont overload on super spicy or sour versions if your tummy is sensitive. Enjoy it yaar.
Of course, sambar is healthy, full of dal and veggies. I ate it almost daily during pregnancy. Just keep the spice and tamarind moderate if you get acidity. Otherwise totally fine and nutritious.
